Real recipes from a real kitchen
Terroir™ brings healthy dishes from cultures across the world to your table — written carefully, cooked at home and shared with our members.

Meet the cook
Efe Byrom
Efe grew up around family cooking, where food was how people gathered, celebrated and looked after each other. That love of honest, home-cooked food led to Terroir: a place to share healthy versions of dishes from many cultures.
Many of the recipes here have been cooked in Efe's own kitchen — like this peach and ricotta ice cream, served with banana, blueberries and walnuts.
How our recipes are made
- 01
Researched
Each dish starts with the place it comes from — the region, the community and the way it is traditionally cooked.
- 02
Written
Ingredients are weighed and measured, and every step is timed so you know exactly what to expect.
- 03
Cooked
Recipes are cooked at home in an ordinary kitchen, with everyday equipment, to make sure they work.
- 04
Refined
Portions, seasoning and cooking times are adjusted, and allergy information is listed for every dish.
From our kitchen
Blending the peach and ricotta ice cream base. We share real moments like this so you can see the food is cooked, not just written.
Some step-by-step pictures in the app are illustrations of each stage; we're replacing them with photos from our kitchen over time.
Peach & ricotta ice cream, in our kitchen
Straight from the freezer and the bowl we ate it in — the churned tub, a scoop in a cone, and the finished serving with banana, blueberries and walnuts.

Ohaw salmon root soup
This is our Ohaw salmon root soup — an Ainu dish from Hokkaidō, Japan — being cooked in our own kitchen. The salmon and wild roots simmer together into a light, nourishing broth.
Watch the short film from the day we cooked it, then read the full recipe with exact measurements and timed steps.
